Study Links Fried Food and Increased Risk of Heart Disease

A study, which was published in the Heart journal, has shown the link between fried food intake and the heightened risk of serious heart disease and stroke. 

This pooled analysis of the available research data has further shown that the risk increases with every additional 114 g weekly serving.

It involved data from 562,445 participants and 36,727 major cardiovascular events, such as a heart attack or stroke for the purpose of assessing cardiovascular disease risk. 

It also included data from 754,873 participants and 85,906 deaths over an average monitoring period of 9.5 years, and it was for the purpose of assessing the potential association between fried food consumption and deaths from cardiovascular disease and from any cause.

The analysis has shown that compared with the lowest category of weekly fried food consumption, the highest was linked with a 28 percent heightened risk of major cardiovascular events; a 22 percent elevated risk of coronary heart disease; and a 37 percent increased risk of heart failure.

A linear association also emerged between fried food intake and major cardiovascular events, coronary heart disease, and heart failure. There were also substantial increases in the risks by 3 percent, 2 percent, and 12 percent, respectively, in tandem with every additional 114 g weekly serving.

The researchers also found no links for mortality due to cardiovascular disease or from any cause. It is important to note that fried foods increase energy intake due to their fat content. They also tend to generate dangerous trans fatty acids from the hydrogenated vegetable oils often used to cook them.
