Scott Tucker To Open Vegan Friendly Food Truck

Pending permits and a suitable location, Austinite Scott Tucker hopes to soon open a new vegan food truck within the Austin city limits. The food truck will offer a variety of “American style” vegan dishes such as vegan versions of hot dogs and hamburgers, as well as french fries guaranteed to not share frying oil with any animal products.

 

According to Scott Tucker, vegan food trucks are already popular in the city, but there is a gap in the market which he hopes to fill be offering American inspired cuisine.

 

Tucker commented on his recent decision to open a new food truck, “People in Austin love food trucks and there are plenty of vegan consumers and vegan vendors. However, I noticed that nearly all of the vegan food available in the various open air food courts relies on ethnic dishes. Mexican food is obviously popular, as is Middle Eastern cuisine and vegan versions of Thai food. I eat from all of those vendors, and the food is great, but I think there’s room for someone to sell hamburgers, hotdogs, meatballs and other so-called normal food.”

 

The new truck will likely appear around South Congress or South First St, but Tucker says he is also open to locations downtown or on the East Side.

 

Tucker says that one of the biggest inspirations for the new food truck is his own struggle to find food that should obviously be vegan, but is far from it:

 

“It’s really difficult to find vegan french fries, and that just doesn’t make sense. I often eat fries that I know were cooked in the same oil where chicken or fish have been fried up. It really bothers me, so I started looking for vegan vendors, and that’s when I realized what a giant hole there is in the marketplace.”

 

Scott Tucker plans to have his new operation in place before the city hosts South By Southwest early next year.
