The course, taught by chocolate expert Bryn Kirk, educates and informs students about the depths and nuances that chocolate can provide, and the reasons it is such a popular food.
Chocolate is the world’s favorite confectionery, with the World Cocoa Foundation estimating that more than 3 million tons worth of cocoa beans are consumed each year, with the majority of that being in Europe and the United States. It’s also healthy. Cocoa beans are rich sources of important minerals including iron, magnesium, and zinc, and several studies have shown a link between chocolate consumption and reduced risk of heart problems.
The lessons from Chocolate University Online are delivered over a nine month period. Topics include the how to taste and describe the individual flavors present in chocolate, three key elements you need to know about chocolate and your health, secrets to pairing chocolate with foods and drinks, chocolate-based recipes that can be made at home, and much more.
Each lesson is delivered weekly by email and comes in a downloadable PDF format. The lessons are not graded with students given the information and time to digest it at their own pace. The lessons start off simply and gradually grow into more complex topics, allowing for a gradual and steady increase in knowledge.
Bryn worked more than a decade in the world of chocolate, developing food products for companies including Nabisco, Ambrosia, and Pillsbury. She has also worked with businesses as a troubleshooter for manufacturing, and has extensive experience solving the many problems that arise working with chocolate.
