Researches Highlight the Anti-aging Potentials of Mushrooms

Beelman is professor emeritus of food science and director of the Penn State Center for Plant and Mushroom Products for Health.

The researcher further said that when the body utilizes food in producing energy, it also causes oxidative stress. This is due to the fact that in the process, some free radicals are also produced. Experts have long revealed that these oxygen atoms with unpaired electrons called free radicals are damaging to proteins, cells, and even DNA.

They are highly reactive atoms that travel through the body in their quest to pair up with other electrons. In fighting oxidative stress and preventing it from wreaking havoc on health, it is wise to replenish the body with antioxidants.

“There’s a theory — the free radical theory of aging — that’s been around for a long time that says when we oxidize our food to produce energy there’s a number of free radicals that are produced that side products of that action and many of these are quite toxic,” said Beelman.

The findings of this research were published in the recent issue of Food Chemistry.
