Chinese Food in Scottsdale Takes Authentic Prize

If we follow the genealogy of Chinese migration throughout the years since the mid 1800’s when mining for gold was in vogue, the first settlers in the U.S. from China were from an area located outside of Guangzhou called Toishan.  This area was positioned in the Southern part of China where there was much sunshine, fertile land, and water.  The local vocations were always geared towards food such as farming crops and raising animals or fishing and consequently, cooking was a way of life and a necessity for many from this region.  Guangzhou also had many different dishes and varieties of food as a result of the vast size in geographic space and exposure to climate and differing livestock, fowl, and sea life.

Many of the Chinese restaurants today in the U.S. are from Fujian Province, where there has been over the past twenty years, the largest migration of Chinese people ever experienced in U.S. immigration since the days of the people of Toishan.  The “Foukienese” people are just North of Guangzhou, also along the coastline occupying a very large area.  Very industrious, the Fujian people have adopted to cooking and bringing over the “boilerplate” Chinese take out cuisine ubiquitous throughout this country.  The problem though has been that there is no authenticity to what we are experiencing everywhere that most people identify with Chinese food today.  Perhaps this is also the path that pizza has taken from the Napolitano roots of Italy.
